The Forge Brewhouse is using the old traditions of "Rheinheitsgebot," the German Beer Purity Law of 1516 that only allows beer to contain barley, water and hops, to brew signature beers in house. It's pushing beyond those traditions to make a corn beer to honor one of DeKalb County's specialties, IPAs with jalepenos, and many other varieties. The Forge Brewhouse is also creating Brick Oven wood-fired farm to table pizzas.

The Lone Buffalo was created to be a restaurant and a brewery under one roof with one goal: to serve good food and beer in a comfortable atmosphere. Chef Brok and his brigade use fresh products from our own farm and from other local farmers and producers. Everything on the menu is freshly cooked, every day, and varies with the seasons. Our beer is crafted, using traditional methods and equipment, from the best malts and hops available – including some from our own farm. The Ropp Jersey Cheese processing facility in north Normal is owned and operated by a family of 6th generation McLean County dairy farmers. The facility produces cheese curds as well as artisan cheddars, colbys and other cheeses. The Ropp family opened this facility to help promote agriculture as a vital industry to American life. The Ludwig family's primary business is the care and breeding of high pedigree, purebred Holstein dairy cattle.
Slagel Family farm is a 6th generation farm in central Illinois. Re-connect with the land and watch the livestock roaming the pastures in the wide-open skies outside the city. As more and more people have the desire to learn more about their food and where it comes from, a farm tour and dinner would be an excellent way to bring you closer to your food. Tours, which run from spring to fall, are a full afternoon of learning and enjoying food. Each farm tour/dinner will be paired with one or more well-known chefs from Chicago.
