Family-owned since 2014, Scorched Earth Brewing Co. prides itself on sourcing local ingredients and using old-world brewing techniques to brew award-winning beer. Their spacious taproom is a hidden gem in Algonquin.

Boasting 24 taps to choose from, along with a fun, laid back vibe that is family-friendly. Although food is not served on-site, patrons can bring in their own food, have it delivered or enjoy food trucks that stop by regularly. Scorched Earth’s beers are crafted on a 15 barrel, two-vessel brewhouse.

Its custom configuration gives their brewers the ability to use old-world brewing techniques like step mashing and decoction to maximize the full potential of the ingredients. Wort generated by the brewhouse is fermented into beer thanks in large part to their single-cell microorganism friends, more commonly referred to as brewer’s yeast. Rarely used today by most modern breweries here in the US, Scorched Earth uses an open fermenter to create some of their special beers and help encourage the brewer’s yeast to create more complexity and intrigue for your senses. Before beer can be packaged, it must cellar for a length of time, letting the yeast finish their magic.

At Scorched Earth they may dry hop the beer or add other ingredients like local fruits or chocolate to take the beer in a new direction. Some of their beer will be barrel-aged in wooden casks to infuse spirits or sent to their sour program to develop a unique patina, unlike anything you have ever had.
