At this small-batch, independent distillery, craft spirits start with locally grown organic corn, wheat, and rye. The process also incorporates water from the free-flowing Rush Creek watershed (hence the brook trout on the label), making for spirits that could only be made in Illinois.
Tours are available Friday–Sunday or by appointment on Monday–Wednesday. At $10 per person (and including a spirits tasting), tours make for a great group activity. But please call ahead to schedule tours for 8 or more people.
